Key Responsibilities Menu Development & Culinary Innovation Design and execute creative, seasonal vegetarian and vegan menus that appeal to a wide range of dietary preferences. Utilize modern culinary techniques to elevate vegetables, grains, and legumes. Ensure all dishes have robust flavor profiles, excellent texture, and high nutritional value. Kitchen & Staff Management Recruit, train, and mentor the kitchen brigade, including sous chefs, prep cooks, and scullery staff. Delegate tasks efficiently, manage shift schedules, and foster a positive, collaborative kitchen environment. Maintain high standards of discipline, hygiene, and morale among staff. Operations & Quality Control Inspect all ingredients for peak freshness and quality before preparation. Oversee the pass, conducting final quality and visual checks before dishes are served to guests. Coordinate seamlessly with the front-of-house team to ensure smooth service and exceptional guest experiences. Financial & Inventory Control Manage food costs, optimize profit margins, and minimize waste through efficient portion control and proper storage. Oversee inventory, track stock levels, and place supply orders with local vendors and organic producers. Ensure strict adherence to First-In, First-Out (FIFO) stock rotation for fresh produce and dry goods. Health, Safety & Compliance Enforce rigorous food safety management systems, sanitation regulations, and workplace safety standards. Manage allergen awareness, ensuring correct preparation and labeling of foods (e.g., vegan, gluten-free, nut-free). Qualifications & Requirements Experience: Minimum of 3–5 years in a back-of-house management position (e.g., Head Chef, Senior Sous Chef), specifically focusing on vegetarian or plant-based cuisine. Education: Formal culinary degree or equivalent diploma is highly preferred. Dietary Expertise: Deep understanding of plant-based protein alternatives, dairy-free/egg-free baking, and accommodating dietary restrictions. Leadership Skills: Proven ability to lead a diverse team in a high-pressure, fast-paced commercial kitchen. Organization: Strong computer and administrative skills for managing staff rosters, food costings, and inventory software.
