About this role

The Role We are looking for a senior R&D Chef (Western Cuisine) who doesn't just follow a brand brief – but helps create it. You will be responsible for conceptualising, developing, and commercialising Western dishes that are delicious, scalable, and commercially viable. From lab trials to 200kg production batches at our Senoko Central Kitchen, you will oversee the entire journey – and then work with Marketing to tell the story. If you have 10+ years in production kitchens or hotels, have worked alongside Food Scientists, and are excited by the challenge of lab-to-production transfer – we want to hear from you. What You'll Do Define our brand's Western culinary vision – propose signature styles, taste profiles, and ingredient philosophies Develop new Western menu items (pastas, grills, sauces, soups, burgers, seasonal specials) Scale recipes for batch production (20–200kg) using central kitchen equipment Lead sensory panels and consumer taste tests Troubleshoot production issues and lead technology transfer from lab to factory scale Partner with Marketing to design go-to-market strategies and product narratives Train central kitchen staff and mentor junior R&D team members Ensure ISO 22000/HACCP/SFA/NEA compliance across all recipes What You Bring Recognised culinary qualification (Degree/Diploma) or equivalent 10+ years in spice paste, sauce & condiments, frozen meals, production kitchen, or hotel industry 3+ years as an R&D Chef working directly with Food Scientists/Technologists Proven track record in product innovation and commercialisation Deep knowledge of HACCP and food safety regulations Versatile in all cuisines (Western primary; Chinese a plus) Creative, detail-oriented, and thrives under pressure Strong communication and presentation skills Why Join Us?
