Assistant Head Chef (Indian Cuisine) Job Description We are looking for an experienced and motivated Assistant Head Chef to support the Head Chef in the daily operations of our authentic Indian restaurant. The successful candidate will assist in overseeing kitchen operations, maintaining high standards of food quality, hygiene, and consistency, while supervising kitchen staff and ensuring efficient service. Key Responsibilities Assist the Head Chef in managing the day-to-day kitchen operations. Prepare and cook authentic North Indian and South Indian dishes according to established recipes and restaurant standards. Ensure consistency in food quality, taste, portioning, and presentation. Assist in planning daily food preparation and coordinating kitchen activities. Supervise and guide chefs, cooks, and kitchen assistants during service. Support the Head Chef in training and mentoring junior kitchen staff. Ensure all food is prepared in accordance with food safety, hygiene, and sanitation regulations. Monitor food quality, freshness, and stock levels throughout the day. Assist in inventory management, stock rotation, ordering, and receiving of food supplies. Minimise food wastage and help control kitchen costs. Ensure proper maintenance and cleanliness of kitchen equipment and workstations. Take charge of kitchen operations in the absence of the Head Chef. Work closely with management and the Head Chef to improve menu offerings and operational efficiency. Comply with all workplace safety regulations and company policies. Requirements Minimum 3 years of experience as an Assistant Head Chef, Senior Chef, or equivalent position in an authentic Indian restaurant. Strong knowledge of Indian cuisine, including tandoor, curries, biryani, vegetarian dishes, breads, gravies, and traditional spice preparation. Ability to supervise kitchen staff and coordinate food preparation during busy service periods. Good understanding of food hygiene, sanitation, and workplace safety practices. Experience with inventory control and food cost management is an advantage. Able to work efficiently under pressure in a fast-paced kitchen environment. Positive attitude, good teamwork, reliability, and strong organisational skills. Preferred Qualifications Food Safety certification is an advantage. Experience working in Singapore or other international restaurant environments is preferred. Ability to communicate effectively in English.
