Chef De Cuisine

We are looking for a Chef de Cuisine to head the kitchen and lead our Kerala restaurant. You will be responsible for menu, quality, cost control, and the entire kitchen team. Key Responsibilities: Kitchen Leadership: Manage all kitchen operations, menu planning, and food quality Menu Development: Create and maintain authentic Kerala menu - fish curry, meen pollichathu, beef fry, appam & stew, Kerala biryani, sadya items, seafood, etc. Team Management: Train, schedule, and supervise Chef de Partie, Cooks, and Commis staff Cost Control: Manage food cost, wastage, inventory, and vendor orders Quality & Hygiene: Ensure SFA compliance, consistency in taste, and high standards for dine-in + home delivery Requirements: 6+ years experience with min 2 years as Chef de Cuisine/Head Chef Expert in Kerala & South Indian cuisine. Must know coconut-based gravies and traditional cooking methods Strong leadership, costing, and kitchen management skills Able to work long hours, weekends, and Public Holidays
