We're Hiring: Head Chef – Indian Cuisine Lead the Culinary Vision at ammākase ammākase, Singapore's award-winning Neo-Indian omakase restaurant, is seeking a visionary Executive Chef to lead our culinary team and continue redefining contemporary Indian cuisine. This role is ideal for a highly creative chef with deep roots in Indian gastronomy, exceptional leadership skills, and a passion for innovation while respecting tradition. Key Responsibilities Lead the culinary direction and execution of the ammākase dining experience. Design, develop, and continuously evolve seasonal tasting menus inspired by the diverse regional cuisines of India. Drive culinary innovation through modern techniques while preserving authentic Indian flavours and heritage. Lead, mentor, train, and inspire the kitchen brigade to deliver excellence consistently. Ensure exceptional food quality, presentation, consistency, and operational efficiency. Oversee food cost, labour cost, inventory, procurement, and kitchen profitability. Build and maintain strong relationships with suppliers to source premium ingredients. Maintain the highest standards of food safety, hygiene, and workplace safety. Work closely with the General Manager to deliver an exceptional guest experience and achieve business objectives. Represent ammākase at media events, collaborations, culinary festivals, and industry engagements. Requirements Minimum 12–15 years of culinary experience, with at least 5 years as an Executive Chef, Head Chef, or Chef de Cuisine in premium Indian restaurants, luxury hotels, or Michelin-recognised establishments. Strong expertise in regional Indian cuisines, including both traditional and contemporary interpretations. Proven experience creating tasting menus, degustation experiences, or chef's table concepts. Formal culinary qualification from a recognised culinary institution is preferred. Extensive knowledge of modern cooking techniques, fermentation, open-fire cooking, sous vide, molecular gastronomy, and contemporary plating. Strong financial acumen with experience managing food costs, kitchen budgets, labour planning, and inventory control. Excellent leadership, coaching, and team development skills. Ability to thrive in a fast-paced, high-performance culinary environment. Strong communication and organisational skills. Prior experience in restaurant openings, concept development, or menu engineering will be highly advantageous. Preferred Attributes Passion for storytelling through food and showcasing India's rich culinary heritage. Creative mindset with a strong focus on innovation and research & development. Deep appreciation for premium seasonal produce and sustainable sourcing. Strong media presence or participation in culinary competitions, chef collaborations, or industry events is an advantage.
