Join our newest pre-opening concept in Dempsey Hill as our next Bar Manager. Inspired by contemporary Asian dining and rooted in premium Chinese ingredients, this casual upscale destination offers an immersive experience across lush indoor and outdoor spaces, where thoughtful hospitality, exceptional food, and innovative beverages come together. As Bar Manager, you will lead the creation and execution of a beverage program that complements the restaurant's modern Asian philosophy. This is a unique opportunity to build a bar from the ground up, influence the guest experience, and play an instrumental role in launching one of Dempsey's most anticipated dining destinations. What You'll Be Doing Develop and oversee the restaurant's cocktails, spirits, and non-alcoholic beverage program. Create a beverage identity that complements the menu's contemporary Asian direction, with a focus on Chinese ingredients, seasonal produce, and modern techniques. Collaborate closely with the culinary, and marketing teams on seasonal beverage menus, pairings, and storytelling. Ensure the beverage program balances creativity, guest experience, and commercial performance. Lead all day-to-day bar operations, maintaining exceptional standards of consistency, quality, and service. Establish and maintain SOPs, recipes, presentation standards, and portion controls. Drive beverage costing, GP targets, budgeting, stock control, and inventory management. Monitor P&L performance and implement strategies to maximise profitability. Build and maintain strong supplier partnerships while sourcing premium spirits, wines, teas, sake, and specialty ingredients. Ensure compliance with all health, hygiene, and regulatory requirements. Continuously optimise workflow, productivity, waste management, and operational efficiency. Recruit, train, mentor, and inspire a high-performing bar team that delivers warm, genuine hospitality. Foster a collaborative culture focused on craftsmanship, accountability, and continuous improvement. Conduct regular training, tastings, quality audits, and performance reviews. Play a key role throughout the pre-opening phase, including bar design, equipment selection, workflow planning, recruitment, training, and opening execution. Support future beverage innovation and contribute to upcoming concepts within the Ebb & Flow Group portfolio. We're Looking for Someone Who Has proven experience as a Bar Manager or in a senior bar leadership role within premium restaurants, or upscale hospitality concepts. Has pre-opening experience and enjoys building systems, teams, and culture from the ground up. Possesses strong knowledge of classic and contemporary cocktails, premium spirits, sake, wine, tea, and Asian-inspired ingredients. Understands how to create beverage programs that naturally complement modern Asian cuisine. Is commercially minded with strong experience in costing, budgeting, inventory control, and P&L management. Leads with confidence, professionalism, and composure in a fast-paced environment. Balances creativity with operational excellence. Is passionate about mentoring teams and delivering memorable guest experiences. Has a genuine appreciation for hospitality, craftsmanship, and continuous innovation.
